Corn and leek fritters

Ingredients
- 2 cobs sweetcorn (TODO: next time, make a note of the equivalent measurement)
- 150g flour
- 1 egg
- 1 leek
- 5 cloves of garlic
- 0.5 tsp pepper
- Handful of cashews
- Salt
Method
1. Chop corn, leek and cashews finely using a food processor
2. Add flour, egg, garlic (pressed), pepper, salt to taste
3. Add a little water and mix well until thick
4. Deep fry until golden brown; 1 tbsp of mixture makes 1 fritter
5. Serve with dipping sauces

- Easy and delicious; well received when entertaining
- Sambal asli and kecap manis make good and easy dipping sauces
